Avocado Toast is a great option if you are running out of things to make to eat. There is no perfect time of day or time of year to make Avocado toast. It's a perfect meal for any season. You can have Avocado Toast for breakfast, lunch and even dinner.
This version of avocado toast takes the traditional toast to the next level. Adding tuna as a protein and vine ripened tomatoes for a sweet juicy bite! Whether you harvest the tomatoes from your garden or your local grocer, the tomatoes definitely give this toast the "wow" factor.

For this avocado toast recipe you will need the following ingredients:

Avocado toast is so easy to make. Start by mashing up your avocado. I usually use half an avocado for 2 slices of toast bread.
If you are adding tuna to the avocado, mix it in at this stage.
Slice your tomatoes vertically while you toast your bread in the toaster.
Spread the avocado and tuna mixture over your toast bread and top with sliced tomatoes and a dash of oregano, salt and pepper.
Hint: let the toast stand for a minute or two while the salt makes the tomatoes sweat. The result is a flavorful avocado toast bite.
Most often I use multi-grain bread for my avocado toast because that's what I have sitting in the fridge. But you can use any type of bread that is sitting in the fridge.
You could literally use any type of bread, so don't worry about what you are using. Here are some substitutions that may fit better with ingredients you have at home.
- Multi-Grain Bread - you can use sourdough, pumpernickel, fortified bread, keto bread or any other favorite bread.
- Additional Ingredients - add onion, garlic, or diced peppers to your avocado mixture.
- Avocado - substitute hummus for the avocado
Add in your favorite ingredient even if it isn't listed above.
Reflection: Cooking is like science, you need to experiment with different combinations to come up with the perfect result (for you). But, don't worry if it's not perfect. Pat yourself on the back for trying, you deserve it! Just try and figure out what you did wrong and do it different next time.
Like any other recipe, you can customize this toast to add a personal touch. Here are some options for a variation of the original recipe:
- Spicy - add chili pepper flakes while cooking to imbue heat into the dish, or banana peppers
- Topping - add a drizzle of reduced balsamic vinegar or any other type of glaze for some added flavor
- Kid friendly - add a side of potato chips (ketchup chips!)

For this toast I used my 4 slice Cuisinart Artisan Toaster. I absolutely love that the toaster can toast 4 slices of bread at one time and comes with options for toasting bagels, frozen bread, reheat option and a cancel button.
Good knives are a must for slicing your tomatoes. Always remember to slice your tomatoes vertically. If you slice them horizontally, all the tomato pulp will fall out of the tomato and make a big mess.
A good cutting board is also a must for the kitchen. Stay away from wooden cutting boards though as they are harder to sanitize. Plastic cutting boards will not be as smooth as wooden cutting boards but are a lot easier to sanitize and most can be placed in the dishwasher for easy sanitization.
This avocado toast is best served and eaten immediately. Making this toast ahead of time is not recommended.
For tomatoes, vine ripened tomatoes are the best choice rather than a tomato that is not ripe or was picked prematurely and ripened during transportation.
If you are not sure, leave your tomatoes out by a window for a day or two before storing them in the fridge.
This will probably come as no surprise to you, but leftover toast doesn't store well. This avocado toast is no exception.
Try to only make as many servings as you can consume in one sitting. The longer the toast sits, the soggier it will become due to the moisture in the tomatoes.
If you choose not to top with tomatoes, the toast will get hard and stale which also doesn't make for good storage outcomes.
Needless to say, this toast doesn't stand up well to freezing.

- Sprinkle dried oregano, salt and pepper to your liking.
