Not sure if I should even call these cookies because they are just wafers dipped in chocolate and technically your are not baking anything. However, whoever eats them will think you spent hours making them. Not to mention that these wafer cookies are a great addition to your Christmas Cookie collection.

Tips and Tricks to Making these Easy Chocolate Peppermint Wafer Cookies
It's All About the Wafers
Hey, guess what? Don't like chocolate? No problem. Cookie Wafers come in all kinds of flavors. In fact you can even use chocolate chip cookies, Graham Crackers or Digestive Cookies dipped in chocolate and topped with sprinkle toppings. Let your creativity come out and think out of the box.
Melting the Chocolate
When melting the chocolate, heat it in the microwave in increments of 30 seconds taking it out to stir it. If the chocolate isn't melted sufficiently, heat for another 30 seconds, remove and stir. Repeat this process until the chocolate is smooth.
Be extra careful that you do not heat the chocolate too much. If you do it will scorch and be totally unusable.
Do I have to use Peppermint?
No. If you don't like the taste of Peppermint, then skip it. Guess what? if you skip it your now down to only using three ingredients. Boolya!
If you do decide to use peppermint, though, be careful not to add too much to the warm chocolate as it may make the chocolate seize up and stiffen. In fact, to prevent this, you may want to use chocolate that is already flavored with mint. I'm sorry I didn't think of this when I made them, but there will be a next time. Another option instead of using the addition of peppermint flavor or mint flavored chocolate is to just sprinkle crushed candy cane on top as a decoration.
Have ready either a cooling tray or a tray lined with parchment paper so that you have somewhere to lay the chocolate dipped wafers after you have dipped them. You will also need either some small tongs or two forks to help you turn the wafers in the chocolate and transfer them to the parchment paper.
White Chocolate or Dark Chocolate?
Quite honestly, if your not a fan of white chocolate, that's OK, use dark chocolate or milk chocolate. They both are a great alternative. In fact, you could probably find flavored chocolate chips in your grocery store or on amazon if you want to really get creative. For this recipe I used baking chocolate. Baking chocolate is a little more forgiving if you are going to melt it for dipping cookies or wafers. However, you could use whatever you have on hand like a chocolate bar, or chocolate truffles or chocolate chips.
To Sprinkle or Not to Sprinkle
For the Chocolate Peppermint Wafers I made, I used green and gold sprinkles because I wanted to achieve a holiday feeling. These were one of the cookies I made for my Christmas Cookie Collection to gift to friends and family.
The possibility on sprinkles is endless. There are so many different shapes, sizes and colors to choose from. Depending on the occasion, you can find sprinkles that you can use to compliment the theme. For example, if you are making these wafers for a baby shower, you can use pink and blue sprinkles, for valentines you can use heart shaped sprinkles, for Easter you can use bunny sprinkles. - 170 g White Chocolate (about 1 package)
- 255 g chocolate wafers (about 1 package)
- ¼ tsp peppermint extract (optional)
- ¼ cups colored sprinkles
- Chop chocolate up into 1 inch pieces and place in a microwave safe bowl. Place in microwave and microwave on high for 30 seconds at a time. Remove from microwave and stir. If chocolate is still solid and lumpy, return to microwave and heat for another 30 seconds. Stir. Repeat until chocolate is smooth and has melted sufficiently for dipping.
- Stir peppermint extract in chocolate.
- Take a chocolate wafer and place face down in chocolate. Lift up with a fork and using the fork, scrape excess chocolate from wafer in an "S" shape. Place dipped wafers on parchment paper and decorate with sprinkles.
